Eating Low-Carb or Keto doesn’t have to be boring or difficult. There are tons of great recipes out there for meals that are simple, delicious and filling. Here are some of my favorite easy dinners for weeknights.
Ditch the Carbs has an amazing recipe for a basic, simple spinach stuffed chicken breast that I fall in love with every time we make. It’s a quick week night meal that the entire family will love.
Kalyn’s Kitchen has a ton of awesome low-carb recipes, but this has got to be one of my favorite. It’s bursting with amazing flavors, and is one of my go-to easy dinners. The family loves this one.
There’s nothing better than throwing something into a crock pot in the morning, and coming home to a steaming, finished dinner after a long day at work. And when it tastes amazing and is low carb? Bonus! This is one of our weekly faves because it’s so easy and filling.

You can have this baby on the table in under an hour, and even better, it tastes great as a make ahead meal. Plus it looks like you spent hours slaving over a stove. Your dinner guests will be majorly impressed.
Start to finish meal in under 20 minutes? Healthy and delicious? Yes please! Salmon is a superfood, and prepared with this Parmesan herb crust, even your most picky eaters will happily devour this meal. Throw in a side salad or some steamed broccoli and you have a low-carb meal that will quickly become part of your regular rotation.
Shrimp Scampi Zoodles for Two, a delicious garlic shrimp and lemon dish over zucchini noodles is an EASY low-carb dish that takes less than 20 minutes! Skinny Taste has some great recipes, but there’s just something about zoodles that I love, and when paired with shrimp, it’s a match made in heaven. You may have to pick up a spiralizer like this one or this one, but it’s totally worth it. We use ours at least once a week.
I will admit it, I miss pasta dreadfully. But this amazing carbonara made from spaghetti squash almost makes me forget my love of the carby pillows of goodness. Creamy, cheesy and tangy, this super-easy dish is great to make ahead and have for dinners during the week.
